Yuzu Pound Cake (Using a Ceramic Oven Plate [HB-5763])
Ingredients
160g of cake flour
160g of sugar
160g of butter (room temperature)
3 eggs (room temperature)
1 teaspoon of baking powder
juice of 1/2 yuzu
1 tablespoon of yuzu zest
[Icing]
70g of powdered sugar
30g of butter
Juice of 1/2 yuzu
1 tbsp of yuzu zest
1.5 tsp of cardamom powder (optional)
*You can use lemon instead of yuzu for this recipe
Introduction
1) Place sugar and butter in a bowl and mix them until it’s creamy.
2) Add eggs and blend well together. Mix in the yuzu juice and yuzu zest.
3) Combine the flour and baking powder in a separate bowl, add to 2) while sifting, and fold with a spatula.
4) Grease the inside of the oven plate with melted butter and line it with parchment paper.
5) Pour the batter into the oven plate and deflate the mixture by slapping it.
6) Place in the oven and bake at 340 F for 30-35 minutes. If it's not enough, bake for a few more minutes, keeping an eye on it.
7) If skewer comes out clean when inserted in the center, the cake is cooked! Let it cool completely before unmolding.
8) For the icing: Melt the butter and mix in the powdered sugar, yuzu juice, yuzu zest, and cardamom powder.
9) After the pound cake has cooled, pour the icing over it.
